Purpose of an Evaporator:
- Absorbs heat into the refrigeration system
- Accomplished by maintaining the evaporator at a temp. lower than the medium to be cooled
- Removes both latent and sensible heat from the medium to be cooled
- Latent heat moisture
- Sensible heat reduces product temperature
